Gurthwurm are voracious eaters that chomp through dirt and soil twice as fast as heavy machinery can move it. As they move underground, they will eat literally anything that is buried in—or that might be digging across—their path.
The strange stones set in a Gurthwurm's body are extremely sensitive to vibration under the ground. The tunnels these Pokémon dig are massive, but they seem to be able to sense structures and busy places above them and will avoid those areas to prevent collapse.
